GF Pea & Mint Fritters

It has already been a week since we landed back in Melbourne, don’t know where the times gone. In between going straight back to work and trying to adjust to the freezing temperatures the time has literally flown. But I think our bodies are still in shock and refusing to get out of holiday mode, I don’t think I’ve ever felt so tired as I’ve been this week, I’ve been like an old woman so when it’s come to cooking I just wanted something quick, simple and above all tasty, thankfully this recipe has it all, the easiest meal to whip up, meaning more time to sit back and curl up on the sofa in front of Harry Potter. Perfect Sunday recipe.

I’m not going to lie I’m having a bit of a fritter fetish right now, after 7 weeks on an Indonesian diet I am in no hurry to see another omelette or Nasi Goreng, I need variety and to cook all the things I spent the last weeks dreaming of. This recipe is so ridiculously easy to make and so tasty. It is ideal as a light and healthy lunch or serve with a good old salad for dinner, either way it looks pretty damn impressive.

I used to hate peas with a passion, I mean who didn’t, but slowly I’m starting to forgive them. Did you know that little old peas are actually pretty damn good for you? They are full of health protective phytonutrients (no I’d never heard of that either) and they provide key antioxidant and anti-inflammatory benefits. Don’t sound too bad now do they?

So not only is this meal ridiculously good for you and the environment (peas are one of the most environmentally friendly crops) but the combination of peas, mint and the dressing is literally the stuff flavour dreams are made of. Trust me, my mouths watering at the thought.

What you’ll need:

For the Fritters:

– 2 eggs
– 1 tbsp Chia seeds
– 200g peas
– 1 clove of garlic
– 3 heaped tbsp. rice flour
– 4g chopped up mint
– feta
– 1/2 lime (you’ll need the other 1/2 later)
– salt and pepper

For the dressing:

– 4 sprigs of fresh mint
– 1 clove of garlic
– 200g sour cream
– salt and pepper
– juice from 1/2 lime
– ¼ cucumber

What you’ll need to do:

– Beat the eggs in a large bowl and add in the chia seeds, leave to soak for 5 minutes
– Roughly mash up the peas a little in a bowl and dice up your garlic
– Add in the peas, garlic, flour, mint, juice from the lime, crumble in the feta, season and mix well
– Heat the oil in a pan and dollop in a nice blob of your mixture, fry for 2minutes until golden then flip over and repeat
– To make the dressing, simply thinly dice up your cucumber, mint and garlic then mix in a bowl with the sour cream
– Squeeze in the lime juice and season and you’re good to go

It literally is that simple, a few quick and easy steps and you’ll end up with the tastiest dinner, it’s healthy, it’s light, it’s pretty perfect. Knock up a quick tomato and red onion salad to serve with your fritters and then sit back and enjoy. Trust us you’ll make these again and again.
