Blue Cheese Brussel Sprouts

Lets be honest, there’s a huge stigma around Brussel Sprouts. I think you grow up ingrained to hate them, bit like Mondays. Realistically if you actually think about it, you’re probably not that fussed but you never ever admit that to anyone, ever, well until now at least. I am having a bit of a sprout moment, call it a minor infatuation. I’ve been trying to find different, tasty ways to cook with them and this has to be my favourite recipe so far. Sometimes you just need to keep it simple and let a few key flavours do the talking. This is such a quick and easy dish. For me it’s the perfect light dinner but you could also use it as a side dish in a bigger meal. Baked Eggs in Avocado

It’s simple really, you can’t beat eggs and you definitely can’t beat avocado so putting the two together has dream brunch written all over it, so just make this dish at the weekend and you can thank us later. This is a fail safe recipe. Tasty, looks the part and involves minimal effort. Top marks for Jonny for rustling this up for us the other day. He even did his and hers versions, such a good egg… What you’ll need – 1 avocado – 2 eggs – bunch of asparagus – mushrooms – (optional chorizo) – basil What you’ll need to do – Grill the asparagus on a baking tray with a good drizzle of oil and salt (roughly 15 minutes) – Meanwhile, Cut the avocado in half and scoop just enough out the centre of each just to fit an egg – Flip the Avocado halves over and cut a small piece of the skin away so that they will sit without rolling around – Season with salt and place on a baking tray – Break an egg …

If Drugstore Espresso was a person, putting it simply you’d want to be friends with them. It’s like that kid who came into school one day wearing his dads bomber jacket and absolutely nailed it. A slick ease we can only dream of, you know the one. The whole vibe here is cool without the try-hard, from the casual industrial decor, to the 90’s hip hop your boyfriends going to claim he can rap along to and don’t even get me started on the staff. This is the type of cafe you’d want to own or at least have a mate that does so you can excuse spending your days sprawled out front in the sun working through the deli cabinet, coconut in hand. There are two types of people in this world…those who always pay to add guacamole and then those other ones. Which are you? If you’re even considering this predicament then I suggest you stop reading now and go away and have a long talk with yourself. Sea-Salad. Make Salad.

A few weeks ago we finally ticked off the Great Ocean Road. 5 people, 1 hippy-looking van, a few surfboards and for some strangely convenient reason someone brought soy sauce? On the second day whilst us girls were sunbathing away the lads being lads got bored and had gone for a stroll down the beach when they saw a man walking back from the rocks with a huge armful of seaweed. He intended to cook and eat what he’d found, “good with beer” he said. That was good enough for us. After the guys pulled a few large ribbons of seaweed fresh from the rocks we attempted to recreate our own masterpiece out the back of the van. We blanched the huge green like tentacles in a saucepan then they were thinly diced and seasoned with olive oil and the soy sauce before dinner was served for the night. Simple but effective. So next time you’re at the beach you need to try this, how much more authentic and fresh can you get. And yeah …
