Kale, Mushroom & Chickpea Soup

So this week has been the first week of Spring, one step closer to summer thank god, but I think someone forgot to let Melbourne know. It’s rained non stop and when it’s not been raining it’s been sulking about it, big miserable grey clouds, meaning there has literally been nothing else to do but hibernate under a blanket with a big bowl of soup, and not just any old soup… o no. It’s been a taste sensation of different recipes going down in our kitchen, but hands down the favourite so far has to be our Kale, Mushroom and Chickpea soup. If you are after a healthy tasty recipe, and I mean who isn’t? Then this is your man. Packed full of flavour and using the king the vegetable world right now, Kale, who’s not only low in calories but full of vitamins and essential nutrients like potassium and protein, this is the perfect dinner for when you need to cancel all your plans and just relax in front of the TV. Every time we make …

Gluten Free Roasted Beetroot and Tomato Tart

I am typing this to you as we sit on the beach in Lombok sipping on a fresh coconut, definitely worse ways to start the day. Whilst we put together our first proper post on our adventure so far here is a little post we forget we had about a dinner we rustled up before we left. Enjoy… After watching an episode of Masterchef the other night I decided they make cooking look deceptively easy, I mean if these ‘everyday people’ can create a masterpiece Gordon would be proud of in under 5seconds then surely I can attempt a gluten free tart? I mean all that butter? No thank you. Surprisingly the hardest part wasn’t making the dough for the pastry, this was pretty straightforward despite missing a rolling pin I’d say we did an alright job. It was …

Cheesy Chickpea ‘Cake’

I always say there are two types of people out there, no not the Beyonces or the Kellys but I mean the differences between those who order a starter or those who wait for dessert at a restaurant. Which one are you? The big sweet or savoury debate… For me it’s starters all the way, I’ve never had that much of a sweet tooth. For one thing I hate chocolate and many sweets aren’t actually vegetarian but I will rarely order a pudding after my meal, unless a cheese board counts? But that kind of proves my point a bit. So when I came across a recipe for a savoury Chickpea Cake finally I was thinking this is a pudding I can get on board with, like the genius’ who invented cheesecake. Realistically there is absolutely nothing sweet or dessert like about this recipe, besides the fact it can be baked in a cake tin and it requires an egg? But heyyy lets just roll with it. Something different right? Chickpeas are a fail safe ingredient. …
