So this week has been the first week of Spring, one step closer to summer thank god, but I think someone forgot to let Melbourne know. Beetroot and Coconut Soup

Over here in Melbourne it’s slowly creeping into winter and god it’s getting horribly cold. This type of weather is what we ran away from London from and if one more person says to me ‘you’re from England, you’ll be used to this’ they’ll get drop kicked all the way there to find out… I am a bit of a broken record when it comes to soup at the moment, what can I say, I’m addicted, there is literally nothing more comforting when its cold and windy outside than curling up with a nice warming bowl of soup. I can’t dunk a big chunk of bread in it like Jonny so my vice is usually a nice gooey layer of cheese. Green Soup

What is it about soup that’s so comforting? It’s not even that I’m feeling sick, just a little bit tired, a little bit jet lagged, but all I want is something homely and soothing and what could be better than a decent bowl of soup? More importantly I’m in need of a big old health boost so earlier I grabbed all the green veg I could think of that would be bursting with vitamins, fibres, and plant proteins and ended up making the most incredibly tasty soup that blows our Roasted Tomato Soup recipe out the park. This is an amazing healthy meal, it’s full of anti-oxidants and anti inflammatories, as well as iron, vitamins and lots of nutrients. So not only does it taste great but it’s so good for you too. Roasted Tomato & Basil Soup

Its so cold back home right now Facebook is drowning in photos of the embarrassing attempt at snow by England and too many status’ moaning about severe frostbite from people de-icing the cars, obviously leaving us no choice but to respond with a picture of our day at the beach. Cruel huh? So it’s kind of ironic now that all I have been craving this week is a big hot bowl of soup, no fuss no crazy concoctions I’m talking about a good old tomato special. We needed to jazz it up from your classic tin of Heinz, so we started by roasting the tomatoes and garlic, hands down my favourite way to cook anything. You roast it and I’m there fork in hand, drooling. It’s easy to forget quite how simple making a soup from scratch can be, and the taste well this one was pretty delicious, we have made it the last four nights.
